Thanks for posting this. I love bulgur and used to eat it at least a couple times a week. I wonder why I haven't lately. This was a perfect reminder to add this to my weekly menu. I would make a good size serving of it and then throughout the week, mix it with veggies left over in my fridge and an egg or two and then fry it in a small pan to make a couple of large pancakes ( or a bunch of small ones) Great for meals or snacks.
