Welcome back to What I Ate Wednesday! Each week when this posts, I ask myself how it could already be Wednesday again? Time flies when you're having fun raising kids!
To keep up with them, I have to eat a good breakfast each day. This was old-fashioned oats, grapes and hazelnuts topped with vanilla soymilk.
Lunch was simple and filling. A bed of organic baby spinach topped with baby lima beans, mushrooms and apples. Tahini miso dressing :)
Snack was a smoothie made with frozen banana, spinach, ice and almond milk. Are you surprised? ;)
Dinner was very "harvesty." Roasted buttercup squash, kale chips, chick peas and roasted beets!
