Oh Westport, MA how I love you. Let me count the ways...
You are 45 minutes from home and I don't have to deal with any Cape traffic when I want to visit you in the summer. Perfect! It's only $7 to park at the beach and even when it's crowded, I don't seem to mind because, well, I'm at the beach.
It's quaint and mostly farm land and ocean. Nothing more appealing to a girl like me!
And if you leave the beach (Horseneck) and ride into town, you can visit this really sweet natural food market. Any place called "Gooseberry" has to be a happy place.
I probably could eat that whole basket of tomatoes myself, with a little salt and pepper. Heaven!
Bought a pint of the blueberries and ate the whole thing in the car while my family got icecream down the street. :)
If you know me, you know peas are one of my favorite things to snack on in the summertime; however, they HAVE to be the sweet peas you eat right out of the shell. Best ones in the world are in Maine right about the 4th of July.
Nature's candy! And then to top things off, they sold my new favorite flavor of Kombucha, Gingerberry.
Can't we all use some words of enlightenment? I certainly can!

Blogs I Like: Healthy Girl's Kitchen
A blog that has this on the front page gets my attention :)
You've watched Forks Over Knives by now, right? Ooooh, don't get me started if you haven't! It's truly the best hour of television and will change your mind about how you eat, I promise (without being scary and gross). The information is sensible and medical, which gets me the most excited. I wonder how many people who turned plant-strong in the past 12 months give credit (if not full, than partial) to the film? I'm guessing at least half.
I love the world of blogs. Cookbooks have their place, but I love the way bloggers share themselves with readers. You really get a feel for the interest and pace of someone's life through their blog. Most of the best tips and recipes I get come from a handful of plant-strong blogs. Some a lot more established than veganmama, and some smaller.
The blog I'm enjoying a lot lately is called "Healthy Girls Kitchen."
But my top tried-and-true love most of the recipes blog is still "Oh She Glows." Angela Liddon, you're amazing :)

Adapted from my Raspberry Almond Thumbprint Cookies.
Yield: 1 (8-inch) pan cut into as many squares as you wish!
Almond squares:
Cherry Almond Chia Seed Jam:
1. Preheat the oven to 350F and line an 8-inch square pan with two pieces of parchment paper, one going each direction.
2. Place almonds into a high-speed blender and grind into flour, making sure not to process too long or the oils will release. Or use store bought almond meal (use approx 1.5 cups + 2 tbsp almond meal).
3. In a large bowl, whisk the dry ingredients together (almond meal, rice flour, ground flax, baking powder, and salt). Use your fingers to break up any clumps of almond meal. In a small bowl, mix together the almond butter, agave, and almond extract. Add wet mixture to dry mixture and stir until thoroughly combined. I got in there with my hands and kneaded the dough together a few times!
4. Set aside 1/2 cup of packed dough for crumbling on top of the jam later. Press the rest of the dough into the prepared pan. You may need to lightly wet your fingers as it’s sticky! Smooth it out and poke it with a fork about 8-10 times all over.
5. Pre-bake the almond base for 8 minutes at 350F. Remove and set aside.
6. Meanwhile, prepare the chia seed jam (or just use about 3/4-1 cup jam of choice). Add pitted cherries and agave into a medium-sized pot. Bring to a low boil and reduce heat to medium-low. Simmer for about 10 mins, stirring frequently. Stir in chia seeds and cook until thickened, about 5 mins more. Remove from heat and stir in the almond extract. Try not to burn your tongue shoveling it in your mouth!
7. Spread jam over the almond base and smooth out. Now crumble the reserved dough on top. Bake at 350F for another 12-13 minutes or so, watching closely. Crumble topping will be golden when ready. Cool in pan on a wire rack before attempting to remove, about 30-45 mins. If you are impatient like me, just cut yourself a square right out of the pan while you wait!

Triple Almond Cherry Crumble Squares from "Oh She Glows"
These are so wholesome I found them on my breakfast plate crumbled over blueberry vegan overnight oats one morning. Enjoy them on their own or serve with a scoop of ice cream for dessert. I used agave in this recipe because I was out of maple syrup and it worked great. Feel free to use whichever you wish, keeping in mind that agave is a bit sweeter per tablespoon so you might need an extra tablespoon of maple syrup if you go that route. Be sure to poke holes in the dough with a fork before baking. I didn’t do this and the dough puffed up on me in the middle, but it was easily fixed with a poke once out of the oven.Adapted from my Raspberry Almond Thumbprint Cookies.

Kathy Freston's "The Lean"
My sweet father-in-law (who just so happens to be about 90% plant strong!) bought me a gift last month: Kathy's Freston's new book, "The Lean." I really appreciated the gift because, quite honestly, I wouldn't have picked up the book on my own. Not that I don't like her books (I loved "Veganist") but I didn't think I'd necessarily learn anything new. And since I'm full-blown plant strong, it didn't really appeal to me.
I was so wrong!
The premise of "The Lean" is that she encourages people new to veganism to try things on for size, one day at a time and walks you through each day until you get to 30. Great advice, as it can be a daunting task to even the most willing person!
Here is a breakdown of the first week:
Day 1. Drink Water. Lots of Water.
Day 2. Have a Hearty Breakfast
Day 3. Eat an Apple
Day 4. Clean Out the Cupboards, and Just for Today, Say No to Your Poison (hello beer and chocolate?)
Day 5. Go a Little Nuts
Day 5. Trade Your Milk and Butter for Plant-Based Versions
Day 7. Put a Little Flax on It
Not too crazy, right? She gives tips for 30 days and I strongly encourage people who are more than just flirting with the idea of veganism (hello Aimee!) to pick up this simple read.
I've been drinking a big ol' glass of room temperature water each morning as soon as I get up. Thanks Kathy Freston! Sometimes it's the simplest things, right?

Iced Herbal Tea, so easy!
My go-to iced beverage in the summer is iced herbal tea, which I started making last summer during a heat wave. You might already make your own, but if not, here are step-by-step instructions on how simple (and cheap!) it is. And you can jazz it up any ol' way you like!
Just choose your favorite flavor. I tend to alternate between this red raspberry and a mixed berry blend.
I heat up 4 cups of water in the microwave until it's nice and hot. Add the tea bags....
Let it brew for about 15 minutes or so. You want it to be really sweet and concentrated, because you'll water it down once you put it in a large container.
This is 2 quarts (8 cups) so it's a 2:1 ratio of water to tea.
But by all means, do what works for you :) I just find this is very easy and quick, and you know that's how I roll!

What I Ate Wednesday
Welcome back to What I Ate Wednesday, everyone's favorite posts!
Breakfast, as you know by now, is usually a variation on Rip's Big Bowl and some fruit. How great are the blueberries and strawberries right now in New England? :) Load up on beautiful fruits!
Lunch was so delicious. I toasted a corn tortilla on 350 for about 10 minutes or so, until it started to harden and get yumtastic. Then I topped with a simple summer bean salad I made and a slice of avocado. A few black corn chips for shazam factor!
My drink of choice lately is Kombucha. Have you had it. It's gingery, bubbly and delicious. Not something I can drink all the time, but when I'm craving some, I have to have it! You can find it at Whole Foods and some Targets.
Afternoons usually consist of a smoothie of some sort. This one was half a cup of almond milk (unsweetened), one frozen banana, about 2 cups of baby spinach and about 5 ice cubes, blended into a healthy frappe. How did I ever survive without my daily smoothie? Anyone else on the same page?
Dinner was so good. Remember Gardein? This is their Mandarin Orange Crispy Chicken with a side of sweet potatoes and salad. Delicious, simple and takes no time to throw together!

Funky things I've had to drink lately!
Every once in a while I like to try something that looks incredibly wacky, just to see if it's good. Here is a perfect example: a drink I saw in a small fridge at the checkout of my local Whole Foods...white cashew water vanilla cinnamon agave. Say WHAT?
Did I mention it was $12 a bottle? And it's not a big bottle, peeps! Thing is, it's good. It's a little strange to drink straight up, but I would like a little poured over oatmeal or something like that. I am happy I tried it, but probably won't ever need to get some again. Here are some details:
