What I Ate Wednesday

Welcome back to What I Ate Wednesday, where we take a look at what I've been cooking up/preparing in the kitchen.

For breakfast I had a special breakfast guest (courtesy of my sweet daughter!) The big guy was dining on Shredded Wheat, Grapenuts, old-fashioned oats, grapes, banana and soy milk. Yum.



Lunch is now portable because (drum roll...) I am now working part time during the day! My go-to easy-to-prepare and quick-to-eat lunch is some carrots and dip (this here is a lentil hummus) and some whole wheat couscous with toasted pecans, chopped apricot and raw red pepper. Simple, easy and cheap! And to think I used to always eat peanut butter and jelly!




Snack was pure luxury (wink, wink, Tom!) and all antioxidant! A POM pomegranate and a couple squares of super dark chocolate. Yum times two. Yum.



Dinner was some baked buttercup squash, sweet potato mash, roasted shallots and brussel sprouts, creamy kale (made with tahini and lemon) and an apple cranberry bake.

What I Ate Wednesday

Did you miss me last week? What can I say? It's a very busy (but fun!) time of year!




Breakfast, I'm sure you're shocked, was the same old yummy bowl of Shredded Wheat, oats and Uncle Sam cereal topped with red grapes and banana. I love it so much it never gets boring!
 


Snack was a scoop of store-bought red pepper hummus with vegetables.




Lunch was a head of romaine lettuce, baby carrots, mushrooms, sliced Trader Joe's marinated tofu, Whole Foods "Health Starts Here" salad dressing and raw sesame seeds!


Dinner was some rice pilaf, Greek baby lima beans, sauteed cabbage with carmelized onions (yum!!) and roasted buttercup squash.

What I Ate Wednesday

Welcome back to What I Ate Wednesday, where we take a look at what I've been up to in the kitchen!
 I can't believe tomorrow is already Thanksgiving? Where does the time go?

Breakfast was the same sort of thing I love every morning: old fashioned oats and grapenuts mixed with raisins, walnuts and bananas topped with vanilla soymilk. Delicious and very filling!





Lunch was a big old yummy apple and this simple salad of baby spinach, carrots and tahini dressing. The crackers are Finn Crisp Rosemary. A lot of flavor and crunch in a simple cracker!




My afternoon snack was a frozen banana chocolate smoothie topped with walnuts. If you can't tell, I love all nuts, but especially walnuts. Remember, although nuts are calorically dense, they are an excellent snack and source of healthy fats.



Dinner was a big portion of kale chips (love them!) topped with a little sea salt, roasted carrots and yellow beets and a couple of quinoa cakes.

What I Ate Wednesday

Welcome back to What I Ate Wednesday! If you're a regular here at veganmama, you may have noticed that I've switched over to a Monday/Wednesday/Friday schedule. I'm hoping this keeps everyone hungry (ha, ha) for more :)


Breakfast will always be my favorite meal of the day. I got a little heavy handed with the soymilk, almost entirely covering the cereal, but here is a bowl of Grape Nuts mixed with old fashioned oats, raisins, walnuts and flax seed. I topped it with banana slices. I could never get through my morning without a substantial bowl of cereal and fruit!


Lunch was a plate of hummus, carrots, pita chips an a sliced raw zucchini. Might sound strange, but raw zucchini is really good this way.


Snack was the usual chocolate/banana/almond milk/ice smoothie, but this time I jazzed it up with some hemp seeds.

Dinner felt very seasonal! Kale chips, curried potato and chick peas over brown rice, and roasted buttercup squash topped with apricot honey glaze (from Stonewall Kitchen, thanks Mom!)

What I Ate Wednesday

Welcome back to What I Ate Wednesday, where we take a quick peak at what I've been up to in the kitchen.

Breakfast was simple and quick. Just a bowl of these brown rice crisps topped with a banana, some walnuts and some snappy grapes, of course!



Lunch was perfect for a post hurricane warm up :) A bowl of stewed curried lentils and tomatoes with a really delicious apple. I swear I could eat these local apples three times a day.  I love making stews or soups like this and serving them over a big bowl of brown rice, cous cous, farro or quinoa. It stretches out your soup and it also gives it that extra nutritional kick!


My homemade kombucha tea is the greatest drink to have at lunch. I'm so happy one of my dear readers shared her starter with me! I make it with rooibos tea, so it has a nice sweet taste.




Snack was the usual! A chocolate protein powder smoothie made with almond milk, ice, a scoop of powder and half a frozen banana. Topped with cacao nibs, peanuts and some chocolate chips for good measure.


Dinner was some steamed broccoli, orange chicken Gardien and garlic brown rice. Yum!



I don't usually go for the old cooked rice in a bag thing. However, this is simple enough for my nine-year-old to make for himself if I'm not home, so I picked it up at Target. It's actually not bad!

What I Ate Wednesday

Welcome back to What I Ate Wednesday!


Breakfast tasted better than it looks (I know, I know, sometimes soymilk just doesn't photograph well, does it?) This was a mix of old-fashioned oats, grapenuts, walnuts, flaxseed, sesame seeds and pumpkin seeds, topped with half a sliced banana.


Lunch was a roasted butternut squash, carrot curry soup with an apple :) Have you noticed how amazing the New England apples are tasting right now?  Cortland, Honey Crisp, Empire and Macs. Yum!





Snack was the usual smoothie. This one is a scoop of chocolate plant-based protein powder, half a frozen banana, ice, almond milk and a sprinkle of cacao beans on top.



For dinner I made a big pot of brown rice and then topped it with this simple pre-made Indian dish.

What I Ate Wednesday

Welcome back to a modified What I Ate Wednesday. I apologize for having a smaller than usual post today! Busy girl :)

Breakfast was a big ol' bowl of the usual: Shredded Wheat and oats mixed with some flax seed (ground) and snappy red grapes. So good!


And my afternoon post-lunch snack? The usual! Spinach and kale smoothie with frozen banana, ice and almond milk. Yes, the kale and spinach sound scary; no, you can't taste them!

What I Ate Wednesday

How can it already be Wednesday? Is time just flying by? I swear, once school starts back up I blink and it's New Years Eve!

So what have I been cooking lately...

Breakfast was so good:


Overnight oats in the crockpot recipe you can find right here. I realize I shouldn't eat breakfast in front of my computer, but some mornings I just don't feel like moving over to the table like a civilized person! Still better than eating cereal in the car, right?

I have to say, it tasted a lot better than the picture makes it look! The apples were perfectly cooked and truly tasted more like dessert than breakfast. No complaints about that! Maple syrup (the real stuff) and cinnamon brought out the sweetness. Thanks again to Mike C. for the link to the recipe.


Lunch was Mexican: Seasoned black beans, mango, guacamole, hot black chips, salsa, mushrooms and tomatoes.


 

 Snack was the usual! Spinach/almond milk/ice/frozen banana smoothie.




Dinner was tastier than it looks, I promise :)

Roasted butternut squash, kale chips, wheatberry salad and some Gardien "steak" bites. Don't you just love food this time of year?

What I Ate Wednesday

Welcome back to What I Ate Wednesday! Each week when this posts, I ask myself how it could already be Wednesday again? Time flies when you're having fun raising kids!

To keep up with them, I have to eat a good breakfast each day. This was old-fashioned oats, grapes and hazelnuts topped with vanilla soymilk.


Lunch was simple and filling. A bed of organic baby spinach topped with baby lima beans, mushrooms and apples. Tahini miso dressing :)



Snack was a smoothie made with frozen banana, spinach, ice and almond milk. Are you surprised? ;)



Dinner was very "harvesty." Roasted buttercup squash, kale chips, chick peas and roasted beets!

What I Ate Wednesday

Welcome back to What I Ate Wednesday, where we take a look at what I've been cooking up in my kitchen!

Breakfast was a lovely bowl of shredded wheat, snappy grapes, strawberries and vanilla soymilk. Yum!



Lunch was a plate of baby spinach topped with tomato, mushroom, quinoa (plain) and some miso tahini dressing.




Snack was a very green smoothie! Ice, almond milk, spinach and frozen banana. So simple and easy to make!




Dinner was some homemade hummus, whole wheat pita chips, homemade hummus and wheatberry salad.



Dessert was some heavenly (!!!) Taza chocolate from the Taza Chocolate people in Cambridge, MA. Have you tried their chocolate? You can get it on line, at various stores around Boston and at Whole Foods. I picked up this bag on our visit to Barrels in Waterville, ME.

What I Ate Wednesday

Hello faithful readers! Welcome back to What I Ate Wednesday, where we take a look at what I've been up to in the kitchen. 

Breakfast was the usual cereal with berries and grapes, with the addition of a handful of walnuts. I LOVE walnuts :)



Lunch was really fun. Baby organic spinach, raw mushrooms, tomatoes, pan-cooked tempeh "bacon" and white raisins for some sweetness!



Snack was a chocolate/strawberry smoothie topped with a scoop of old-fashioned oats. These smoothies are really filling and really satisfying mid day!



Dinner was de-licious! Stuffed grapeleaves, Gardien orange chicken and red and green tomato slices.

What I Ate Wednesday

Welcome back to What I Ate Wednesday, where we take a look at what I've been up to in the kitchen. Most of the time it's not very exciting, but I always thoroughly enjoy what I eat. I think it's also fun to show you how simple vegan eating can be. 

Breakfast was the usual cereal mix with fruit and unsweetened soymilk. Good stuff and very filling!




Lunch was some homemade hummus and tabouli, pita chips, baby carrots and amazing local tomatoes :)



Snack? Yep! A green smoothie made with one frozen banana, spinach (about a cup of fresh baby spinach), about a cup of almond milk and a handful of icecubes. Tastes like banana icecream, I swear!



Dinner was some leftover Chipotle with some more amazing tomato. When I go to Chipotle, I order the vegetarian rice bowl with brown rice, corn salsa, mild salsa, guacamole and lettuce.


Evening snack was some frozen red grapes = awesome!
