What I Ate Wednesday

Hello beautiful people! Welcome back to "What I Ate Wednesday!" I hope you find these posts inspirational and fun. I love taking pictures of my meals for you and really appreciate the feedback.

Breakfast was the usual, Rip's Big Bowl topped with whatever fruit I'm crazing. This morning was banana. I couldn't get through my morning workout without it! Please remember to eat before the gym, it's your fuel!



Lunch was so good. Gardien "beefless tips," homemade hummus, carrots and homemade tabouli.



Snack was the usual, a spinach/frozen banana smoothie with almond milk.


And topped with mixed nuts and dried fruit!




Dinner, I won't lie, was thrown together at the last minute. That's what summer is all about, right?
Brown rice, black beans seasoned with cumin, sliced and stir fried zucchini, spinach, corn and mango salsa!




Dessert, although not pictured, was 2 chunks of dark chocolate dipped in almond butter = heaven!

What I Ate Wednesday

Good Morning my dear readers! Welcome back to What I Ate Wednesday. Today's post is another bunch of yummy summery eats. Don't you love this time of year?

Breakfast was Rip's Big Bowl, bananas and blueberries topped with unsweetened almond milk. Have you tried almond milk yet? It's so good, obviously :)


Lunch would make my Lebanese family proud. Homemade tabouli and a side of sweet potato chips, which make a great spoon, by the way.


My snack was a cup of Simply Granola topped with soy milk. I'm sure I'm not the only one who sometimes just craves cereal at off times? Late at night? Anyone?





Dinner was light since I'm often running to baseball games these days (go Norton!). This was a colorful plate: organic baby spinach, cooked butternut squash, raw mushrooms, cooked garlic baby lima beans, asian slaw, tomatoes and celery. Topped with bbq-flavored tofu. YUM.

What I Ate Wednesday

Welcome back to What I Ate Wednesday! This post is a fun one because some of my favorite foods are in peak season this month: corn and blueberries :)

Breakfast was the typical bowl of Rip's Big Bowl topped with fresh blueberries and almond milk. Yum. I never grow tired of this simple, substantial breakfast.




Lunch was...delicious. Homemade tabouli, corn on the cob and tempeh sloppy Joe's. Something about the minti-ness of the tabouli with the bbq sauce of the sloppy Joe's was a perfect mix.





In the afternoon (on the rare occasions in which I'm not having a green smoothie!) I like to make something sweet/salty/crunchy, like these yummy soynuts. They are good mixed with dried fruit, dark chocolate, etc. The next time you're throwing together a trail mix, add dry roasted soynuts :)






Dinner was "what can I make in a flash and bring to the baseball field?" a.k.a. wraps! I used Gardein Mandarian Orange Crispy Chicken on a whole wheat wrap with lettuce and tomato. Easy to make a bunch and bring them to a game! Certainly beats the junk food they sell at concessions!

What I Ate Wednesday

Welcome back to What I Ate Wednesday, everyone's favorite posts!

Breakfast, as you know by now, is usually a variation on Rip's Big Bowl and some fruit. How great are the blueberries and strawberries right now in New England? :) Load up on beautiful fruits!



Lunch was so delicious. I toasted a corn tortilla on 350 for about 10 minutes or so, until it started to harden and get yumtastic. Then I topped with a simple summer bean salad I made and a slice of avocado. A few black corn chips for shazam factor!


My drink of choice lately is Kombucha. Have you had it. It's gingery, bubbly and delicious. Not something I can drink all the time, but when I'm craving some, I have to have it! You can find it at Whole Foods and some Targets.



Afternoons usually consist of a smoothie of some sort. This one was half a cup of almond milk (unsweetened), one frozen banana, about 2 cups of baby spinach and about 5 ice cubes, blended into a healthy frappe. How did I ever survive without my daily smoothie? Anyone else on the same page?



Dinner was so good. Remember Gardein? This is their Mandarin Orange Crispy Chicken with a side of sweet potatoes and salad. Delicious, simple and takes no time to throw together!

What I Ate Wednesday

Welcome back to What I Ate Wednesday, everyone's favorite peak into what I'm up to in the kitchen. Noticing any patterns?  I like my meals quick, well-rounded and filling.

Breakfast was the usual, Rip's Big Bowl with grapes. As for the addition of grapes to cereal, don't knock it until you've tried it! I love red grapes, but they need to be really fresh and snappy. These did the trick!
I also tossed in some banana for good measure.



Lunch was typical me: an assortment of leftovers in the fridge!


Simple plain chopped kale/romaine salad, lentil sweet potato stew and wheatberry salad. All filling and really full of flavor.


Tied me over until smoothie hour:


I realize the smoothie looks a little odd, but it rocked. Frozen banana, about 5 ice cubes, 1/4 cup almond milk (unsweetened) and a whole bunch of fresh spinach, blended into a thick frappe. Topped with crushed walnuts and raisins. I'm a sucker for anything with walnuts and raisins!

Dinner was a peanuty-Asian noodle dish.

I started with some brown rice pasta (my new favorite!)


Some of the ingredients I typically use to make Asian sauce:


Add some fresh and some frozen vegetables


And the finished meal was just right on a cold (!?!?) June night!

What I Ate Wednesday

Good morning friends! Welcome back to another "What I Ate Wednesday" post. I've had so much fun with these because once a week I get to pretend I'm a food photographer.


I realized after I uploaded the picture that I took my breakfast picture before I added the almond milk. This was a bowl of Rip's Big Bowl topped with bananas and walnuts, and eventually, topped with almond milk :)




Lunch was so typical veganmama: stuff thrown together with whatever is in my fridge. This is baby spinach topped with lentils, carrots, hummus, grape leaves, tomatoes and about a quarter of a sweet potato. No dressing necessary when you have hummus, don't you agree?



Sometimes snacks just have to be chocolate-based, right? This was about four ice cubes in the blender with about a half cup of almond milk, a scoop of chocolate protein powder (plant based) and a half frozen banana. I also sprinkled some unsweetened coconut on top for good measure. I think I had already eaten most of it by the time I remembered the camera :)




Dinner looks smaller than it actually was, but it was a very good roasted buttercup squash stuffed with a savory stuffing of quinoa, apricots and sage. Side dish of mushrooms, onions and cabbage and a mango just for fun :)


Dessert felt fancy. It was an almond pear cake I made from the book Clean Start. The next time I make it I'll tweak it a little, but it felt special for a mid-week dessert. And looking at this, you'd never guess there were no eggs, butter, white flour....

What I Ate Wednesday


Welcome back to another fun "What I Ate Wednesday" post. A little shout out to my friend Aimee, who I know enjoys these posts the most!

I bet you could already guess I had Rip's Big Bowl for breakfast, right? To jazz things up, I added watermelon, bananas, grapes and strawberries with almond milk. I love almond milk so much I can't believe I've only been drinking it for about 8 months. It's delicious and filled with a lot of nutritional punch! Do you have a brand preference? I'm not yet brand specific, but I prefer the unsweetened kind. Most foods don't need that extra sweetness. Especially when you're eating fruit with a meal.





I went out on a limb and tried a different kind of drink: KOMBUCHA! Fun to say, right? Well, it's actually really good. Crazy tasting because it's naturally fermented, but fun. Both my husband and I liked it when we split this bottle. You can get it at Whole Foods and I've also seen some varieties at Target. This particular flavor was our favorite.





Lunch was a random assortment of yum: kale chips, mango, carrots, brown rice, bean and corn salad and peach salsa. Ole!







     
Since my daughter wanted to make her own dinner, she asked that it make it to the blog :) This is her whole wheat tortilla filled with black beans, a small salad and some fruit. Simple and kid friendly.
TVP loaf with peas, caramelized onions, mashed red potatoes, broccoli and buttercup squash. That's a whole lotta vegetables! 
For dessert, we made our favorite "pudding" from the blog, For the Love of Kale! This takes all of about 3 minutes to make and my kids do it on their own. Victory! And because I love the taste of raisins and walnuts together, I had to top it off with a small handful!
